LASAGNA IN A PAN?



INGREDIENTS

  1. LASAGNA PASTA (parboiled)
  2. RICOTTA CHEESE 
  3. PARMESAN CHEESE 
  4. MOZZARELLA 
  5. CHOPPED TOMATOES 
  6. MINCED MEAT
  7. ONIONS AND GARLIC MINCED 
  8. PARSLEY 
  9. CUMIN
  10. SALT 
  11. PEPPER


METHOD 
  1. add olive oil to a pan,add the minced garlic and onions the moment you start smelling the olive oil
  2. sweat these two for a few minutes 
  3. add minced meat and cook until the meat no longer has that pink color
  4. add chopped tomatoes 
  5. add salt,pepper,cumin
  6. cook for 30 minutes 
  7. arrange the pasta gently across the sauce 
  8. add ricotta cheese in small chunks on the pasta 
  9. add mozzarella cheese
  10. simmer for 10 minutes or until the cheese is melted 
  11. add parmesan cheese and serve with a garnish of your choice or of course parsley.

Not your everyday potato wedges and grilled chicken




INGREDIENTS 

  1. CHICKEN THIGHS 
  2. SIRRACHA SAUCE 
  3. ROSEMARY
  4. SWEET PEPPER POWDER
  5. GARLIC POWDER
  6. OLIVE OIL
  7. BARBECUE SAUCE 
  8. POTATOES CUT INTO WEDGES 
  9. PARSLEY(yeah i know i love parsley)
  10. SALT 
  11. PEPPER
  12. THYME
  13. KNORR STOCK CUBES
  14. ONIONS
  15. BUTTER
  16. CHIVES



METHOD
  1. Add chicken thighs,knorr cubes,thyme,sliced onions into a pot and bring it to a boil with the right amount of water
  2. Boil for about 10 minutes 
  3. strain the chicken from the stock and put the stock aside 
  4. marinate the chicken thighs with sirracha sauce,sweet pepper powder,salt,pepper,barbecue sauce,garlic powder,olive oil.
  5. grill the chicken for 30 minutes in a 250 degrees pre-heated oven (15 minutes on each side)
  6. Boil the potato wedges in the chicken stock previously used
  7. Boil until not much of the stock is left 
  8. Roast on a pre-heated pan with butter and rosemary 
  9. Garnish both potatoes and chicken with chives and parsley

INGREDIENTS

  1. fettuccine(boiled) 
  2. cheddar cheese
  3. parmesan cheese
  4. salt 
  5. black pepper 
  6. parsley 
  7. chopped tomatoes 
  8. paprika 
  9. onions(finely minced) 
  10. garlic(chopped roughly) 





METHOD
  1. roughly chop 5 cloves of garlic and add to a pre-heated pan with olive oil
  2. add minced onions
  3. add tomatoes,salt,pepper,paprika
  4. simmer for 10 minutes 
  5.  add boiled fettuccine (I'm going to post a short manual on how to boil pasta perfectly)
  6. stir until the whole sauce is incorporated into the pasta 
  7. add cheddar cheese
  8. wait for the cheese to melt 
  9. serve with a sprinkle of parmesan and parsley for garnish
  10. And wallaaaa...

My coke infused grilled chicken.




INGREDIENTS
1.Whole chicken
2.Sesame oil
3.Maggi,Arome(Assaisonnement seasoning)
4.2 cups of coke
5.Scotch bonnet (3 pieces)
6.4 cloves of garlic
7.Cherry tomatoes (6 sliced into quarter pieces)
8. One white onions
9.Parsley
10.salt and pepper
11.butter
12.olive oil
13.All purpose seasoning




METHOD
Cut chicken into 4 pieces gently removing the backbone of the chicken,ill try to post a video on how to do that soon.Soak chicken with coke and allow it to to marinate for 10 minutes.Remove chicken from the coke and make sure you don't have any excess coke on it.Make a paste using the scotch bonnet and the garlic,add this to the chicken,add the salt, pepper,maggi arome,sesame oil.Grill chicken at 190 degrees for 15 minutes on each side.Put sliced cherry tomatoes and onions into a bowl and season with butter,olive oil,all purpose seasoning and parsley.Grill for a few more minutes just to get that nice char on the vegetables.Serve with roasted potatoes.

My creamy potato casserole











My cousin invited us over for iftar during ramadan and the food was amazing,she made this delicious casserole with vegetables and potatoes.So i felt why not retry it with a little elegancia twist.It came out pretty well.






Ingredients 
Potatoes pealed and cut into average size chunks
Cooking cream
Parmesan cheese 
Mozzarella cheese
Oregano
Salt 
Rosemary 
Black pepper 
Broccoli 
Carrots 


Process 
-Boil potatoes for 30mins,make sure the potatoes are not over cooked you don't want a mess when you stir everything up 
-add cooking cream into a bowl,add all the spices,Parmesan listed above and stir 
-gently add potatoes and stir carefully to avoid breaking the potatoes 
-pour into a casserole dish 
-add broccoli and carrots 
-sprinkle mozzarella cheese 
-bake at 250 degrees for 20 minutes 
-Monitor it every few minutes to make sure the whole thing is not burning down 
-allow it to rest before serving 
-goes well with grilled chicken
