INGREDIENTS AND DIRECTIONS
- Blend plum tomatoes (picture below) and 2 red peppers
- Heat olive oil in a pan and add 4 crushed cloves of garlic and basil leaves
- Pour in the blended tomatoes, make sure the oil is hot enough sizzle on contact with the tomatoes
- Cook on low heat for about 30 mins
- Make sure you continuously stir the sauce to prevent burning
- Season with salt and black pepper and paprika powder
- Add oregano
- Meanwhile Boil water with olive oil and salt
- Cook penne for about 6 mins
- Drain the pasta and save some of the water used to cook the pasta
- Add pasta and some of the water you saved
- Stir and allow them to get married for a few minutes
- At this point you can add the grated cheese
- Serve and garnish with parmesan and parsley
