Chicken Skewers


INGREDIENTS AND DIRECTIONS

  • For this recipe you can easily get chicken breast and use or you can do it the hard way like I did. lol.
  • YES I deboned a whole chicken, I’m not really a fan of chicken breast and I also hate eating one thing. I love surprises 
  • So after deboning I cut the chicken parts into chunks, did the same with the onions and red peppers
  •  For the chicken marinade, 
  • Add ginger and garlic paste (pictures below)
  • White pepper powder 
  • Stock cubes 
  • Half a tbsp of Coriander powder and all spice 
  • About two tablespoons of Encona Hot pepper sauce (picture below) 
  • Put the chicken on the stick, I did two pieces of chicken then one piece red pepper then the onion then another piece of red pepper then two more pieces of chicken 
  • You can freestyle this 
  • Heat some butter on a grill pan and sear skewers on both sides for about 5 mins or just until you get that charr
  • Cook in the oven for another 15 to 20 mins 
  • Serve and garnish with parsley

Penne Arrabiata


INGREDIENTS AND DIRECTIONS 

  • Blend plum tomatoes (picture below) and 2 red peppers
  • Heat olive oil in a pan and add 4 crushed cloves of garlic and basil leaves  
  • Pour in the blended tomatoes, make sure the oil is hot enough sizzle on contact with the tomatoes
  • Cook on low heat for about 30 mins 
  • Make sure you continuously stir the sauce to prevent burning 
  • Season with salt and black pepper and paprika powder
  • Add oregano 
  • Meanwhile Boil water with olive oil and salt
  • Cook penne for about 6 mins 
  • Drain the pasta and save some of the water used to cook the pasta 
  • Add pasta and some of the water you saved 
  • Stir and allow them to get married for a few minutes 
  • At this point you can add the grated cheese 
  • Serve and garnish with parmesan and parsley

My One-pot slow cooked lamb


INGREDIENTS AND DIRECTIONS 

  • Wash lamb chops and dry 
  • Season with stock cubes, white pepper, garlic and ginger paste (check below), rosemary
  • Heat a tablespoon of olive oil on a grill pan(check below) and sear lamb chops for about 6 mins on each side 
  • Transfer the lamb chops to a bigger pot, make sure its non stick 
  • If you have some of the marinade from the first step add it at this point
  • Add all spice (check below), cumin powder, 4 tablespoons of ketchup, and soy sauce 
  • Blend 2 scotch bonnets and chill peppers(about 2 or 3 should do )
  • Add pepper mix 
  • Add a tbsp of honey, one tbsp of vegetable oil
  • Allow to cook for preferably 3 hours on low heat 
  • Just before serving add parsley and Finley chopped onions and a tbsp of butter
  • Serve with bhaturi or rice
