INGREDIENTS
- Chicken thighs (quantity depends on you)
- Cooking cream
- Chicken stock
- 2 limes
- Onions finely chopped
- Salted butter (you can use normal butter if you can't find that)
- Corn flour
- Chives
- Parsley
METHOD
- Season chicken with salt and pepper
- Melt butter in a pan
- Brown chicken on both sides (approximately 5 mins on each side)
- Keep chicken aside
- Melt more butter in the same pan
- Add chopped onions
- Allow the onions to brown,scrape off all the good stuff from the chicken
- Add chicken stock
- Reduce the sauce until a thick consistency is achieved
- Remove the sauce from the heat and add cooking cream
- Put the pan back on the heat but don't allow the cream to boil
- Put chicken in a casserole dish and drizzle the sauce over the chicken
- Cook the dish at 250 degrees for 30 mins in a pre-heated oven
- Thinly slice about two limes for garnish
- Sprinkle parsley and chives for some color and freshness
