One pot chicken with cream sauce




INGREDIENTS

  • Chicken thighs (quantity depends on you)
  • Cooking cream
  • Chicken stock 
  • 2 limes
  • Onions finely chopped
  • Salted butter (you can use normal butter if you can't find that)
  • Corn flour
  • Chives 
  • Parsley 
METHOD

  • Season chicken with salt and pepper 
  • Melt butter in a pan
  • Brown chicken on both sides (approximately 5 mins on each side)
  • Keep chicken aside 
  • Melt more butter in the same pan
  • Add chopped onions 
  • Allow the onions to brown,scrape off all the good stuff from the chicken 
  • Add chicken stock 
  • Reduce the sauce until a thick consistency is achieved 
  • Remove the sauce from the heat and add cooking cream 
  • Put the pan back on the heat but don't allow the cream to boil
  • Put chicken in a casserole dish and drizzle the sauce over the chicken 
  • Cook the dish at 250 degrees for 30 mins in a pre-heated oven
  • Thinly slice about two limes for garnish
  • Sprinkle parsley and chives for some color and freshness
