RAT-e-TOO-ee




So here we are our first dish from Paris. I made mine with a little bit of a twist,i added marinara sauce and some mozzarella cheese.Then for some spice i added bell peppers.Personally ill definitely use this as a side dish with of course some chicken and roasted potatoes. I actually kind of like it,i love how the oregano works with the vegetables and cheese.It almost kind of gives you that vegetable pizza taste without the dough.

INGREDIENTS
2 medium size tomatoes
1 medium size egg plant
1 small yellow bell pepper
1 small red bell pepper
Marinara sauce
Mozzarella cheese
Garlic about two cloves
Olive oil
Salt and pepper
Oregano
Basil

DIRECTIONS 
Slice all vegetables into thin slices
Heat up a pan
Mince garlic and toast until brown
Remove toasted garlic
Add marinara sauce
Season with salt,pepper,basil
Allow to cook for about 15 mins
Pour sauce into a casserole dish
Add mozzarella cheese
Arrange vegetables anyway you like it
Drizzle oil over vegetables
Sprinkle some salt and pepper
Bake for 30 minuets at about 250 degrees
Garnish with Oregano
